Here's one for you. I'm rather enjoying, and then enjoying once more the opening to act two of ENO's Pinafore, where it starts with a small lad alone on stage doing a hornpipe, then two others join him, then two more, until the whole chorus are there in a regimented cross between a clog dance hornpipe and riverdance - almost. It does break the build for a few solo moments and doesn't quite deliver with everyone doing the same steps at the end but it is joyous. What numbers do just build and build from solo to full company?

Sunday from Sunday In The Park doesn't build in number of people but builds in volume. It starts very quietly and just builds and builds. I can't listen to the song without a little emotional weep.

I know it is opera and not MT in the eyes of many, but the Act 2 finale of The Marriage of Figaro is a great example of a number that grows and grows.
It starts as a duet between the Count and Countess. Susanna then enters much to their surprise. Figaro enters shortly afterwards and more confusion reigns. Antonio the gardener arrives to complain about damage to his flower bed. The scene is completed by Basilio, Bartolo and Marcellina bursting in demanding justice/vengeance.
It is a wonderful increase in musical texture and complexity. Each character is clearly portrayed and the story telling is very deftly handled.
It is a brilliant 15 minutes of theatre.
Gilbert and Sullivan were very adept at creating sustained musical numbers featuring many characters as well as a large chorus. The Act 1 finale of Iolanthe is probably my favourite but the Act 1 finales of The Mikado and Yeomen of the Guard are similarly successful.

Quintet from West Side Story (I think that's the right name?). I think it's the Act 1 closer, and starts with just couple of singers then builds as other main characters join in with singing their main themes, and adds in gang members etc. and packs quite a punch.

One of my favourite bits of the show. I think it’s called “counterpoint” in MT terminology but if I’m wrong someone will correct me.

A Weekend in the Country from A little Night Music is glorious, the title song from Mame always annoys me (because it's too repetitive and I fear for the sopranos vocal health having to hit those notes 8 times a week), and the opening of Titanic is just stunning. ( but also Ladies Maid, No Moon Act one finale, and We'll Meet Tomorrow are all superbly constructed). So Maury Yeston wins!
