Does the National hire standbys and understudies? I know the Donmar doesn't

Yes, they do for the Lyttleton and Olivier theatres, but I believe not for the smaller Dorfman.
As you posted here I presume you're asking in relation to Follies, so yes, that will have understudies.

They do also (I learned!) have the 'Company' of actors still, a group of actors who take smaller roles across a (I presume) season of shows in rep. And also incorporates some understudies. Not entirely sure how it works but seems to be an added actor safety net at the NT!
